Dora’s Pollo Fiesta

Prep Time: 5 minutes Bake Time: 45 minutes Serves: 4 Ingredients: 1 can (10 3/4 oz.) Campbell’s® Condensed Cream of Chicken Soup OR Campbell’s® Condensed 98% Fat Free Cream of Chicken Soup 1 cup Salsa 1/2 cup water 1 cup whole kernel corn 3/4 cup uncooked regular long-grain white rice 4 boneless chicken breast halves Paprika 1/2 cup shredded Cheddar cheese Directions: MIX soup, salsa, water, corn and rice in 2-qt. shallow baking dish. Top with chicken and sprinkle with paprika. Cover. BAKE at 375°F. for 45 min. or until done. Sprinkle with cheese. ______________________________________________________

Chicken Parmigiana

INGREDIENTS

  • 2-1/2 egg, beaten
  • 5 ounces dry bread crumbs
  • 5 skinless, boneless chicken breast halves
  • 1-7/8 (16 ounce) jars spaghetti sauce
  • 5 ounces shredded mozzarella cheese
  • 1/2 cup and 2 tablespoons grated Parmesan cheese

DIRECTIONS

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking sheet.
  2. Pour egg into a small shallow bowl. Place bread crumbs in a separate shallow bowl. Dip chicken into egg, then into the bread crumbs. Place coated chicken on the prepared baking sheet and bake in the preheated oven for 40 minutes, or until no longer pink and juices run clear.
  3. Pour 1/2 of the spaghetti sauce into a 7×11 inch baking dish. Place chicken over sauce, and cover with remaining sauce. Sprinkle mozzarella and Parmesan cheeses on top and return to the preheated oven for 20 minutes.

Gufong

INGREDIENTS

  • 4 cups of water
  • 1 lb of corn meal
  • 1 lb of all purpose flour
  • 1/4 cup margarine
  • 3/4 cup of sugar
  • 1 Tsp oil
  • 1/2 Tsp salt
  • 2 Tsp baking powder

DIRECTIONS

  1. Boil Water, Margarine, Sugar, and Salt
  2. Remove from heat, add corn meal and mix until all of the lumps dissolve
  3. Return to heat, cook over very low heat for about 20 min, stirring occasionally
  4. Cool to handle, then add baking powder and all purpose flour a little at a time, until dough is easy to handle by kneading (dust hands with flour)
  5. Roll into Corn stick shape
  6. Fry in a frying pan half filled with oil on medium heat until all sides are golden
  7. Serve Hot

Thumbs-Up Chicken

Prep/Cook Time: 20 minutes Serves:

Ingredients:

1/2 cup all-purpose flour 2 tsp. paprika 1 tsp. garlic powder 1 tsp. ground black pepper 1 tsp. ground red pepper 4 boneless chicken breast halves 1 can (10 3/4 oz.) Campbell’s® Condensed Cream of Chicken Soup OR 98% Fat Free Cream of Chicken Soup 1 container (8 oz.) sour cream

Directions:

MIX flour, paprika, garlic powder, black pepper and red pepper on plate. Coat chicken. HEAT chicken 10 min. or until browned, on George Foreman Grill. Set chicken aside. ADD soup to skillet. Heat to a boil. Place chicken in pan. Cover and cook over low heat 10 min. or until chicken is done. Stir in sour cream. —————————————————————————————————–

Banana Bread

INGREDIENTS

  • 3 or 4 ripe bananas, smashed
  • 1/3 cup melted butter
  • 3/4 cup sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups of all-purpose flour

HEAT oven to 350 degrees

MIX butter into the mashed bananas in a large mixing bowl with a spoon.

MIX in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in.

ADD the flour last, mix. (no more than 25 stirs… too many will make the loaf hard)

POUR mixture into a buttered 5×9 inch loaf pan.

BAKE for 1 hour. Cool on a rack. Remove from pan and slice to serve.

LOL! Was this really called Dora’s Pollo Fiesta, or is that what Ash named it?

Is it wrong that I think Dora’s Pollo Fiesta looks good?

Also a good tip on the chicken parm use a meat mallet to pound it out to 1/4 to 1/2 inch (it cooks super fast is really tender and added bonus is its a good way to get out frustrations after a shitty day)
